we're gonna strip and chop up and we're gonna mix that all together it's gonna go on plastic wrap or wax paper we're gonna roll it up cinch the ends and my little trick is to put it inside a cardboard tube that way it'll hold its shape when you're putting in the refrigerator so let's get to it all right so we have some fresh rosemary here what we're going to do is strip it and chop it [Music] so have the softened butter we're gonna

mix in the gorgonzola and we have the rosemary okay so what I have here on the cutting board is a sheet of plastic wrap or you can use wax paper we're gonna put the compound butter with the herbs cheese right here and then we're gonna

roll it into a log as best you can and what I like to do is put it inside a cardboard tube so it holds its shape when you refrigerate it so gently pull it through to help form it inside there don't you have it equal squeeze the air out on the sides and twist and then in the refrigerator it goes to firm up

alright let's slice the onion so we can get this in a pan with some butter and caramelize them these I take both the top and the bottom off so you have the ends here I like to turn it sideways and chop just straight down all right so we're gonna season each of these on all sides with kosher salt and fresh black

thawed out dust it and roll it out [Music] alright so we'll cut this rectangle now in half so I get two squares of the puff pastry we're going to put down two little slices of the compound butter and then we're going to do a little bit of the caramelized onion and we're doing it in this order because this is going to

this over and as you can see the two medallions of butter right there this is wrapped and we're going to egg wash it let's do the other ones with some of the puff pastry scraps we can cut out make a little design I like to make like little leaves and I don't cut it out like that and just make a few slices and we're gonna put this on the puff pastry and then put egg wash all on it all right so let's make the egg wash
