so this cook goes fairly quickly we're cutting it in two so we got 2 4 and 1/2 pound pieces right it all adds up now that's the first thing we're going to do we've got some rub here and you want to use your favorite rub on this good beef rub right we're using a little Chipotle rub here man this is gonna taste real good we're gonna coat this two pieces all over all right now if you've never had top sirloin before you definitely

got to check this out this is an awesome piece of meat it's real tender especially if you cook it kind of slow right that's we're going to do here and we're going to do this double rubber method which we're going to show all right we've coated this these pieces in the roast right here real good and what we're going to do is wrap it in some plastic all right because we want it sit for a little by maybe four hours or maybe even overnight

these are ready right we've let them set for about four hours with this run you can see the beef roast taking on some color of the rub looks good enough to eat already now we've got a medium heat going on in this grill and we're going to be cooking these roast indirect opposite the hot coals you know all about that right and we're going to cook them at a fairly low temperature about 250 to 275 degrees Fahrenheit this

are of course your time will be totally different but what you need to do is take a reading an internal temperature of these roasts and we here have about 100 degrees Fahrenheit internal and that's when we're going to pull them off right so don't worry so much about time just use a good accurate thermometer get that internal temperature now like I said we've already checked these out they're 100 degrees Fahrenheit internal and we're just gonna wipe them off just a little bit we're not trying to take any rub off just a little bit of excess
